Toong to Speak at Harvard Seminar on Healthy Eating – UMass News and Media Relations

Ken Toong, executive director of auxiliary enterprises, will be a featured speaker during the exploratory seminar “Mediterranean Diet: Promotion and Dissemination of Healthy Eating,” on Monday, Sept. 16 at Harvard University.

Toong’s talk, “College Students Eating Better: What Works,” will focus on how the Mediterranean diet has been successfully integrated into the dining program at UMass Amherst and has led to a positive experience for customers.

For the past nine years, Toong has been executive director of auxiliary enterprises (AE). The AE umbrella includes UMass dining (residential and retail), UClub, conference services, the UMass Hotel, the retail store and the UMass Club Boston.

Held in the Radcliffe Institute for Advanced Study from Sept. 15 to 17, the event will be led by Dr. Stefanos N. Kales, professor of medicine and in the Chan School of Public Health at Harvard. The goal of the seminar is to develop methods to promote the adoption of Mediterranean diet principiles in workplaces, schools, institutions such and the military, and the food service industry.
